Ingredients
- 24 Chicken Wings – Free range
- BBQ dry rub – I used the Rustic Garlic & Herb from Robertsons
- ½ cup backing powder
- ½ cup Rooibaard Meat Marinade
Ranch Dressing
- 1 tbsp Dill
- 1 tbsp Parsley
- 1 tbsp Chives
- 1 tbsp Garlic powder
- ½ tsp Onion powder
- 2 tsp Lemon juice – Freshly squeezed.
- 1 cup mayonnaise
- ½ cup buttermilk
- Salt & pepper to taste

Nothing surpasses the pleasure of indulging in a pile of smoked, perfectly crispy chicken wings. And it would be a challenge to find anything that outshines the incredible homemade ranch dressing accompanying them. The key to achieving the ultimate crispy chicken wing lies in the meticulous preparation process. Begin by taking a kitchen towel to pat your chicken wings dry. Following that, generously coat them in your preferred dry rub and baking powder. Yes, baking powder is the secret ingredient that works wonders, extracting all the moisture from the chicken skin and contributing to that desirable crispiness.


Set the prepared wings aside and turn your attention to the fire. Ignite a full chimney with lump wood charcoal and pour it into your PK Grill. Since we’re opting for a smoky flavor, employ the indirect cooking setup. Close the lid and elevate the ambient temperature to 150 degrees, aiming for an internal temperature of 78 degrees for the chicken wings.
Place your wings on the grid, specifically on the indirect side. After approximately 50 minutes, when the wings are nearing completion, remove them, generously coat them in Rooibaard Meat marinade, and return them to the smoker for an additional 10 to 15 minutes to achieve a delightful caramelization.
