Ingredients
- 8 Large Chicken drumsticks
- BBQ dry rub
- Dipping Sauce
- 3 tbsp Plain yoghurt
- 2 tbsp mayonnaise
- 1 tbsp crushed garlic
- 2 tbsp finely chopped peppadews
- ½ tsp garlic salt
- 1 tbsp fresh lemon juice
- Salt and pepper – for taste
How To Do It:
Quick and easy is the key, and the secret lies in butterflying your drumsticks. Why? Not only does it expedite the cooking process, but it also expands the cooking surface of the chicken pieces and imparts an extra burst of flavour to your meat.
Once you’ve butterflied your chicken pieces, generously apply your chosen dry rub and let them rest in the fridge for 30 minutes.
Using a chimney shoot, ignite your lump wood charcoal. When the charcoal is ready, transfer it into your PKGO using the indirect method. We are opting to smoke these butterflied chicken drumsticks.
For the Garlic & Peppadew Aioli, combine all the ingredients in a bowl.
Arrange the chicken drumsticks on the PKGO grill, ensuring that the alternate vents are open to facilitate indirect airflow. Within 45 minutes, the internal temperature of your chicken should reach 78 degrees Celsius. The aluminum smoker and grill combo offers the added advantage of retaining heat four times longer than any steel grill or smoker.
Allow the chicken to rest for 4 minutes, then dip and savor the goodness.
